Recipe: Pineapple Sweet Wheat Salad

PINEAPPLE WHEAT SALAD

3/4 cup cooked wheat berries*
1 (8 oz.) pkg. cream cheese, softened
2 tablespoons lemon juice
1 (15 oz.) can crushed pineapple, undrained**
2 pkgs. (3 oz. each) instant vanilla pudding
1 (12 oz.) container frozen whipped topping, thawed

Mix the cream cheese and lemon juice. Add pineapple. Sprinkle dry pudding mix over top and mix well. Fold in whipped topping. Fold in the cooked wheat.

*TO COOK WHEAT:
Place 1 cup whole wheat berries in 2 cups water. Place in the microwave on High for 15 to 18 minutes. Watch after 15 minutes so water does not cook away. Strain. Use as above or for other wheat dishes.

**May substitute a can of fruit cocktail.
