I'm glad that you found us and that you're enjoying Recipelink. Thank you for pointing out the omission in the recipe. The beans should be added with the broth and brought to a simmer before the kale is added. I'm sure spinach leaves would be a good substitute for the kale - other greens would work too. Escarole would be the traditional Italian choice and frozen collards are handy to have on hand for adding to soups. I've also seen soup recipes using the leafy part of Romaine lettuce leaves if you have those handy. It's a good way to use up the darker outer leaves that you may not want in a salad.
