Recipe: Whole Wheat Muffins

WHOLE WHEAT MUFFINS

1 cup whole wheat flour
1 cup flour
4 tsp baking powder
1/2 tsp salt
3/4 cup lt brown sugar
3/4 cup chopped walnuts
3/4 cup raisins
1 cup milk
2 eggs, beaten
2/3 cup melted vegetable shortening

Preheat oven to 350 degrees F. Grease and flour 18 muffin cups.

Sift flour, baking powder and salt. Add brown sugar, nuts and raisins.

Combine milk and eggs. Mix in shortening and blend well. Stir into dry ingredients just until moist. Fill muffin cups a little more than half full.

Bake 15-20 minutes.

Makes 18 muffins
