Hi Betsy-- I just found this site and see lots of great-looking recipes. Thank you so much for all the recipes for one or two!

One question about your Cannellini Bean Soup-- at what point do you add the beans?

And while we're at it, I'm not a fan of kale-- could I use spinach instead?
