Recipe for Salsa:

I did not use all the hot peppers this recipe called for. Us Northerners are winmps :)
(I used around 5 jalapenos)

CHUNKY HOMEMADE SALSA

7 pounds tomatoes (about 20)
10 Anaheim chili peppers or poblano chili peppers
3 jalapenos or serrano chili peppers
2 cups coarsely chopped onion
1/2 cup snipped fresh cilantro
5 cloves garlic, minced
1/2 c. vinegar
1 tablespoon sugar
1 teaspoon salt
1 teaspoon pepper


1. Wash tomatoes. Remove peels, stem ends, cores and seeds. Coarsely chop tomatoes. Measure 14 cups. Place in a large colander. Let drain 30 minutes. Place drained tomatoes in an 8-quart Dutch oven. Bring to boiling. Reduce heat. Simmer, uncovered for 45-50 minutes or till thickened to desired consistency, stirring frequently.

2. Neanwhile back at the ranch, seed and chop Anaheim or poblano chili peppers. Measure 3 cups. Seed and chop jalapeno or serrano peppers; meaaasure 1/3 cup. Add chili peppers, onion, cilantro, garlic, vinegar ,sugar, salt and pepper to tomatoes. Return mixture to boiling. Removce from heat.

3/ ladle salsa into hot, clean pint canning jars (I used 1/2 pints)leaving 1/2 inch headspace. Wipe jar rims and adjust lids. Process jars in a boiling water canner for 35 minutes. (Start timing when water begins to boil). Remove jars from canner; cool on racks. Makes 4 pints.
