Regarding Goat Cheese

Misc.
Christine:

The following is according to The Cook's Thesaurus:

chevre frais = ch vre frais = fromage de ch vre frais =
fresh chevre = fresh goat cheese

Pronunciation: SHEH-vruh FRAY

Notes: Don't confuse this mild fresh cheese with aged
ch vre, which is rarer but far more
flavorful. Fresh ch vre is like fromage
blanc, only made with goat's milk. It's
sometimes flavored with herbs or spices.

Substitutes: fromage blanc
