Recipe(tried): Seafood Etouffe

Main Dishes - Fish, Shellfish
SEAFOOD ETOUFFE

1 stick (1/2 cup) margarine or butter
1 cup chopped onion
1/2 cup chopped bell pepper
1/4 cup chopped celery
1 teaspoon paprika
Salt and pepper, to taste
1 lb shrimp, crawfish or crabmeat
Chopped green onions (for garnish, optional)
Chopped fresh parsley (for garnish, optional)
3 cups cooked rice (for serving)

Melt margarine or butter in heavy skillet. Add onion, bell pepper and celery and saute until onion is clear.

Add seasonings and seafood and cook approximately 15-20 minutes or until done.

Top with chopped green onions and parsley if desired. Serve over cooked rice.

Makes 4-6 servings
