Roasted Stuffed Boneless Turkey Breast

Melodie... I just looked something like this up at the library in a book by Julia Child titled THE WAY TO COOK. She has a 10 lb. bone in turkey breast
and cooks it for approximately 2 hours until temps reach 162 - 165 on a meat
thermometer. I followed this last year and it came out beautifully. She
has you dip cheese cloth in melted butter, lay it on a jelly roll pan and
then after brushing melted butter on the skin side of the turkey you place
it on the cheese cloth. Salt and pepper the turkey breast, brush with butter and then fill with your stuffing. Then you use the cheese cloth to pull it
all together and secure it into that beautful "turkey" shape, turn it over
so it is skin side up and just bake. This was so delicious and came out
really pretty. My family thought it was the best they'd ever had.
