Carne Guisada (Puerto Rican Style)
Adapted from: Puerto Rican Cooking by Vivian Davila
Servings: 4
2 tablespoons olive oil
2 cloves garlic, chopped
1 tablespoon vinegar
1 tablespoon salt
2 teaspoons pepper
1 teaspoon oregano
2 pounds beef, cut in cubes
5 medium potatoes, diced
7 small carrots, chopped
1 medium onion, chopped
1 medium green bell pepper, chopped
1 medium jalapeno, chopped
3 medium bay leaves
2 cans beef broth
1 cup tomato sauce
1 cup corn
15 medium olives, chopped
hot cooked rice (to serve)
Mix oil, garlic, vinegar, salt, pepper, and oregano together. Rub into meat. Marinate for 1 hour.
Heat a soup pan and saute the meat until well browned on all sides.
Add potatoes, carrots, onions, bell peppers, jalapeno, and bay leaves. Saute for 10 minutes.
Add beef broth and tomato sauce. Bring to a boil, cover, reduce heat and simmer for 1 hour.
Add corn and olives. Simmer for 15 more minutes.
Season with salt and pepper and serve with a bowl of rice.
