salt pork

Salt pork is used a lot in Southern cuisine. It's often used to flavor boiled vegetables such as green beans, collards, black-eyed peas, etc. Where salt pork isn't available (or if you don't want to buy a whole pound when the recipe calls for only a small cube), you can substitute bacon, although the flavor isn't really the same.
