Dear Lee:

I understand that it's a flavoring agent, but I see salt pork so rarely in recipes that I'm not sure what ingredients are usually flavored with it. For instance, is it generally good with chicken, as it was in my coq au vin recipe, or is that an unusual use of salt pork?
