MONTEREY RICE
2 cups uncooked rice
2 cups sour cream
2 cans (6 oz each) green chiles
10 oz. Monterrey Jack cheese, grated
Fresh Parmesan cheese, grated
Cook the rice. While still hot, add sour cream, chiles, and Monterey Jack cheese. Put into a 2-quart casserole dish.
Cover and bake at 375 degrees F for 25 minutes. Remove cover and sprinkle top with Parmesan cheese. Bake another 5 minutes uncovered.
