Hi Sam;
Wow, wilted lettuce was a "staple" in the Appalaychian households when I was younger. Your recipe is right on the button as to how it was fixed, but nobody knew what Iceburg lettuce was then, it was always greenleaf lettuce, and it was a passage of spring when the first leaves of the lettuce were big enough to pluck and make this dish. It was always served with pinto beans and a big slice of cornbread, and plenty of butter. I can still smell the vinegar simmering when I read your post, and thanks for the memory on this one.
Peace to you and hope everyone at TKL who doesn't know of this dish that you should try it, it's a pretty old one, and sure is delicious.
