Smiling Kitchen Gods!

I have to say the Kitchen Gods were smiling early this morning! We are celebrating my Father's 80th birthday tomorrow at a surprise party. His new bride asked if I would bring the birthday cake. He has been talking about checkerboard cakes of late, remembering how magical he thought they were as a boy. I have my Mother's checkerboard cake pan set, so decided I would surprise him with one. I got up at 5 this morning to bake the layers so it wouldn't make the house so hot. Then I forgot to spray the first pan with Pam! It's not the kind of cake you can just scrape back into the bowl and start over, what with the divider rack separating the different cake flavors into rings. I just sprayed that the moist cake mixes I was using would have enough oil in them to make the removal from the pan after baking possible. As I said, the Kitchen Gods were smiling and all is well. Instead of waiting the suggested 10 minutes on the box, I loosened that pan immediately after baking (I could tell as it was the one that wasn't pulling away from the sides of the pan!)and, after evening up the top of the layer with a bread knife, turned it over onto a rack and hit it several times with a table knife handle (by the looks of the back of this pan, this is something my Mother had done many times before!) I am happy to say the cake came out of the pan beautifully. Now if I can just get the frozen layers to town tomorrow afternoon and frost it without mishap in the cab of our truck before taking it into the restaurant! (It's just toooooo hot now in AZ to transport an iced 3 layer cake 100 plus miles....at least for this cook!) May the Kitchen Gods shine on you, too! -Micha
