Recipe: Classic Fudge Frosting (2 cup and 4 cup versions)

CLASSIC FUDGE FROSTING

TO FILL AND FROST A 4 LAYER CAKE
(makes about 4 cups):

1 (8 oz) pkg. (8 squares) Baker's Semi-Sweet Chocolate
1/4 cup (1/2 stick) butter
2 lbs. (8 cups) confectioners' sugar
Dash of salt
2/3 cup milk
2 tsp. vanilla

TO FILL AND FROST A 2-LAYER CAKE:
(makes about 2 cups):

4 squares (1 oz each) Baker's Semi-Sweet Chocolate
2 tablespoons butter
4 cups confectioners' sugar
salt
1/2 cup milk
1 teaspoon vanilla

Melt chocolate and butter in saucepan over very low heat, stirring constantly.

Mix together sugar, salt, milk and vanilla; add chocolate mixture, blending well. Let stand, if necessary, until of spreading consistency, stirring occasionally.

Spread quickly, adding a small amount of additional milk if frosting thickens.
