Stuffed (Cr Cheese) French Toast

Stuffed French Toast

Softened cream cheese (2)
Apricot or peach jam (1)
1 loaf inexpensive French bread
2 tablespoons orange juice concentrate
2 beaten eggs
2 cups milk

Mix cream cheese and jam. The proportions should be 2 to 1. Cut off the end of a loaf of French bread. (Use an inexpensive store brand, higher quality ones are too dense.) Cut a " pocket part way down the bread,
then cut the slice off.

The entire slice should be about 1" inch wide. Spread 1 to 2 rounded teaspoons of mixture into the pocket.

Dip the bread in the orange juice, egg, and milk batter mixture and fry lightly in a buttered skillet.
