Blueberry French Toast (using ice cream and orange juice)

BLUEBERRY FRENCH TOAST
1 or 2 medium-size French Baguettes or loaves; ends discarded and loaves cut diagonally in 3/4-inch slices
4 large eggs
1/2 cup premium vanilla ice cream
1/4 cup fresh orange juice
1 Tablespoon pure vanilla extract
1 Tablespoon ground cinnamon
pinch of nutmeg
Blueberry and pure maple syrup
Spread out the bread slices in a non-reactive dish.
In a medium bowl, mix eggs, ice cream, orange juice, vanilla, cinnamon, and nutmeg. Pour over bread slices and let it sit until you are ready. I have left it overnight, covered in the refrigerator and it was fine.
Heat your griddle, melt a small amount of butter and add the soaked bread. Cook until brown on one side, turn and cook about 2 minutes.
Transfer to plates and cover with berries of your choice or sometimes I use apple slices cooked with butter, brown sugar and cinnamon. If I use berries, I pour heated blueberry syrup and maple syrup on top and then top with lemon zest. Enjoy!!
