Hi Don. Re a substitue for Saffron - you could use ground turmeric powder if you are only using the saffron in your recipe for colour as that is the primary use of turmeric - it doesn't have a whole lot of flavour. However, if your recipe uses it for flavour, then i'm afraid that there really is no other substitute for it. It is expensive and i only use it in special dishes - it is not meant to be an everday spice! I use the actual stamens which i pour a little boiled water over and then crush the stamen a little to release the colour and aroma before adding to the dish. I know that you can also buy Saffron powder but don't know how economical this is.....i use a small pinch of the stamen for an average recipe. Here in the U.K less than 1 gram is about 2.60 so i use it wisely. Hope this helps. Any questions, let me know!
