Substitute for ricotta

Hi Ellen,

If you have plain yogurt in the house you can make yogurt cheese by draining it in the refrigerator overnight - place the yogurt in a fine strainer or line a strainer with cheesecloth or a coffee filter and set it over a bowl to catch the liquid that will drain off.

This should substitute for the ricotta with good results (but may add a little tartness to the recipe depending on the yogurt).
