These muffins are great

When I saw the title of your post, I wondered -- and -- yes, it was! I, too, found that great recipe on a Libby's pumpkin can. We've been enjoying those muffins for years, and lots of my co-workers, too. A friend showed me how to rub the topping ingredients into a paste and then push bits off a spoon onto the batter. The streusel isn't crumbly, instead it turns crunchy. This is a great recipe for those apples that aren't bruised or brown, just a little soft or mealy. Thanks for reminding me, Gina, especially when I have a half can of pumpkin languishing in the fridge!
