GOOD MORNING COFFEE CAKE
1 1/2 cups buttermilk baking mix (like Bisquick)
1/2 cup quick-cooking oats
1 1/2 cups unsweetened Apple Sauce, divided use
1/3 cup sugar
1/2 teaspoon ground cinnamon
1 egg
1 teaspoon vanilla
2 tablespoons margarine or butter, softened
Topping (recipe follows)
Heat oven to 350 degrees F. Grease 8-inch round pan.
In large bowl, combine baking mix, oats, 3/4 cup apple sauce, sugar, cinnamon, egg, vanilla and margarine. Stir vigorously for 1 minute; spread into prepared pan.
Bake at 350 degrees F for 30 to 35 minutes or until toothpick inserted in center comes out clean. Remove cake from oven and turn oven to Broil. Immediately spread cake with remaining 3/4 cup apple sauce; sprinkle with Topping.
Broil, 5 inches from heat source, 3 minutes or until golden. Serve warm or cool.
TOPPING
1/3 cup coconut (OR 1/3 cup chopped nuts)
1/3 cup quick-cooking oats, uncooked
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons margarine, softened
Combine coconut, oats, brown sugar, cinnamon and softened margarine.
Makes 1 (8-inch) round cake, 8 servings
