Recipe: Great Wall Hoisin Pizza (Martin Yan)

GREAT WALL HOISIN PIZZA

2 cooked pizza crusts (9-inches each)
FOR THE PIZZA SAUCE:
1/4 cup hoisin sauce
1/4 cup tomato paste
1 teaspoon sesame oil
1 teaspoon grated ginger
FOR THE TOPPING:
1 1/2 cups shredded roasted chicken or sliced char siu (barbecued pork)*
1 tablespoon hoisin sauce
1/2 teaspoon sesame oil
1/8 teaspoon Chinese five-spice powder
3 fresh shiitake mushrooms
1/2 red bell pepper
1/4 cup chopped fresh cilantro
1 cup shredded mozzarella cheese

Preheat oven to 400 degrees F.

Combine sauce ingredients in a small bowl, mix well and set aside.

In bowl, combine chicken or pork, hoisin sauce, sesame oil and five-spice powder. Stir to coat meat evenly.

Clean mushrooms; discard stem and slice caps thinly. Seed red bell pepper and slice thinly.

Spread half of pizza sauce atop each crust. Top each with half the mushrooms, bell pepper, meat and cilantro. Sprinkle half of cheese over each pizza.

Place topped crusts on aluminum foil-lined, rimmed baking sheet. Bake until cheese is bubbly, about 10 minutes. Transfer pizzas to cutting board. Slice into wedges and serve.

*Char siu is available ready-made in the deli section at Chinese groceries.
