being farmed in Tennessee now and are readily available here. I've been watching for a good prawns recipe. As I understand it, prawns are fresh water and shrimp are salt water.

I love Paella and will definitely try this. I'll have to buy some Madeira, my dear. The sweetest wine in the house right now is Reisling.
