Dear Becky:

I respect your daughter's decision. It means a whole new method of eating for her to get adequate protein, however. My first suggestion is that you contact a REGISTERED DIETICIAN through your local hospital (it will not be expensive). An RD is your best insurance to explain the full spectrum of nutrition available from a vegetarian diet.

If your daughter still drinks milk or eats eggs, that will help. There are many healthy recipes (as simple as cereal and milk or a scrambled egg sandwiched between two Nutri-Grain Eggo Waffles) that will boost protein.

On the subject of beans, they seem bland at first but veggie people love them! Adjust seasonings to make them palatable. If it is a problem of their unmentionable effect upon us - use a product called Beano. It works.

On tofu, I had a tough time with this one too. Scroll down a little, there are some tofu recipes that are palatable. In the interim there are "veggie burgers" on the market that are very palatable (my favorite is a product called "Garden Burger," I love it with sprouts, lettuce and BBQ sauce).
