Recipe: Clarified Butter/Microwave

Got outBarbara Kafka's Microwave Gourmet and she's got a recipe for clarified butter.

Cut butter into tablespoon size pieces. Heat, loosely covered with paper toweling, at 100% power to melt. Skim solids from surface of liquid and discard. Pour off clear liquid carefully, leaving the milky solids behind.

Melting Times for Butter
1/4#(in a 2 cup measure)= 2 minutes
1/2# (in a 4 cup measure)= 2 minutes, 30 seconds
1 # (in an 8 cup measure)= 4 minutes

Yields:
1/4 # butter equals 1/3 cup clarified butter
1/2# butter equals 3/4 cup clarified butter
1 # butter equals 1 2/3 cups clarified butter
