Recipe: Windmill Cookie Bars

WINDMILL COOKIE BARS

1 cup butter, softened
1 cup sugar
1 egg, separated
2 cups all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. baking soda
1 cup slivered almonds

Preheat oven to 350 degrees F. Grease a 15x10x1-inch baking pan.

In a bowl, cream butter and sugar. Add egg yolk, mix well; set aside.

Combine the flour, cinnamon and baking soda, gradually add to creamed mixture.

Press into prepared baking pan.

Beat the egg white, brush over dough. Sprinkle with almonds.

Bake at 350 degrees F for 20-25 minutes or until a tooth pick inserted near the center comes out clean. Cool 5 minutes and cut into bars, cool completely

Makes 2 1/2 dozen
