Recipe(tried): Nouvoux Breakfast Burrito

Breakfast and Brunch
This is a kind of nouvoux breakfast burrito I came up with while playing around in my kitchen:

Something that I like to do which is very quick and easy is to spread some fat free refried black beans (they're wonderful!) on a flour tortillia, and sprinkle it with your choice of cheese (swiss, smoked gouda, sharp cheddar...whatever you like). Set it aside.

Meanwhile, fry up an egg or two, over easy (if you are concerned about fat or cholesterol, use Egg Beaters...they will be scrambled, but that's OK too). While the eggs are frying, heat the tortilla with the black beans and cheese in a microwave until the cheese is melted. When eggs are done, place them on top of the tortilla. Top with a gourmet salsa and guacamole if desired. I found a really good sweet and spicy salsa made with no tomatoes called Paula's. But, use whatever you like! If you make the eggs over easy, leave the tortilla flat...if you scrambled the eggs, roll it up. Throw a couple bacon slices on if you desire some meat. Enjoy

Anyhow, this is nice, quick breakfast you can make in 5 minutes. It offers a lot of flexibilty. It can be made very low fat as well. I think the refried black beans and an unconventional salsa make the dish.
