Recipe(tried): Breakfast Burritos

Breakfast and Brunch
Do you like breakfast burritos? Scramble 1-2 eggs per person, place in the middle of a medium-large flour tortilla. Top with 2 Tb. or so refried beans from a can, and sprinkle with grated cheddar cheese. If you microwave the beans for 15 seconds or so before spooning them onto the eggs, the cheese will melt nicely. You can top this concoction with salsa if you like, roll everything up and it goes wonderfully with coffee & orange juice. Takes about as much time as regular eggs & toast.

If Mexican food isn't your style, try scrambled eggs with leftover rice and vegetables instead. Some fast food places will put cooked bacon, eggs & cheese together. (Not too bad if you're in a real hurry!)
