Recipe(tried): French Onion Soup with Beef

Broth. I have used this recipe often. One of the variations I
use is vidalia onions. You are certainly in the right part of
the country for that. When they are in season & we can get
them up here, I buy about 10 lbs., caramelize them, & freeze
them in bags for use in this soup. You can certainly use
yellow onions, but if you ever have the opportunity to try
it with Vidalias, do, it's great.

French Onion Soup

1 1/2 lb yellow onions, thinly sliced (about 7 cups)
1/4 C butter
1/2 tsp salt
1 tsp sugar
7 C beef broth (if you want the recipe for homemade broth,
let me know.)
2 tsp Worcestershire sauce
1/8 tsp Tabasco
French bread, cut into 1 in. slices \
shredded Swiss or Gruyere cheese | all optional
freshly grated Parmesan cheese /

Cook onions in butter over low heat 15 minutes. Stir in salt &
sugar; increase heat to medium-low. Cook stirring almost
continuously, until even, deep golden brown (25 to 30) min.
Stir in beef broth, Worcestershire, Tabasco & pepper; simmer
30 to 40 min. Arrange bread on baking sheet; broil until
lightly toasted on both sides. Sprinkle w/Swiss cheese; broil
until cheese is melted.

To serve: Spoon soup into bowls, place bread on top & sprinkle
w/Parmesan. Yield: 9 Cups
