Recipe: Smoky Potato Chowder (using scalloped potatoes mix, 1970's)

1 medium onion, sliced
2 tbsp. butter
1 (4.7 oz) box Betty Crocker Scalloped Potatoes (dry mix)
2 1/2 cups water
2/3 cup plus 1 1/2 cups milk, divided use
4 fully cooked smoked pork sausage links, sliced
Cook and stir onion in butter in 3 quart saucepan until tender.
Stir in (dry) potato slices, sauce mix (from the potatoes), water, and 2/3 cup milk. Heat to boiling, stirring frequently. Reduce heat; cover and simmer, stirring occasionally, until potatoes are tender, about 30 minutes.
Stir in sausages and remaining 1 1/2 cups milk. Heat through.
Makes 4-6 servings
