That's a LOT of apple butter! There are certain recipes for coffee cakes or spice cake where you can substitute applesauce for the oil/fats in the recipe. I'm wondering if applebutter could be used the same way - it's the same consistancy, just with more flavor - I bet it would be good!

The other thing is, apple butter keeps forever in the refrigerator - I've got a large jar that I've had in there about a YEAR!! And I brought it out the other day to put on a piece of toast (that's what I do with it, mostly) and it was just fine, no furry mold on it like sometimes happens when things get shoved to the back of the refrigerator. It tasted just as fresh is newly opened.

If you would be interested in a coffee cake recipe which does that substitution of applesauce, let me know and I'll hunt it up. It has a nice crumb topping and is a moist cake.
