Recipe(tried): Cinnamon Cukes (A fun recipe)

Was served these when I lived in Kansas, by a wonderful woman/cook, and then there was the 'guessing' of what these were. They taste just like Spiced Apple Rings! Takes about (5) Days to makes, but not a difficult process.

CINNAMON CUKES

2 GALLONS of Large Yellowed Cukes=8 qts or= 32 cups; peel & remove seeds,
cut into pieces; soak for 24 hours into 2 Cups pickling lime (Mrs. Wage's) & 8-1/2 qts. water. (in glass or crockery if possible)

Next day: drain, pour fresh iced-cold water over slices for 3 hours; drain.

Put the drained pieces into a non-reactive pan (non-alum.) & cover with this solution: 1 cup white vinegar; 1 small bottle red food coloring and enough water to cover the pickles.

SIMMER FOR 2 HOURS, this is the dying process. Drain again.
Make up this SYRUP; 2 Cups vinegar (cider); 2 Cups water, 11 Cups sugar, 8 sticks cinnamon and 8 ounce package Red Hots (Cinnamon) Candies

Mix and pour SYRUP over the pickles in a pot; bring all to a boil. Cover and let set overnight. (Day 1)
Then on (Day 2 and Day 3) Heat, set; Heat then on third day (Day 3) pack HOT into jars, seal. Water bath in boiling water to cover, about 15 minutes.
