Recipe: Super Suppers Catalina Meatballs with Noodles

I found the recipe for the meatballs. I have not tried this recipe because I still have the entree that I made at Super Suppers in my freezer. These are all of the ingredients that I remember using at SS.

CATALINA MEATBALLS WITH NOODLES

24 large or 48 small meatballs (you can use store-bought or make your own)
1/2 cup diced red peppers
1/2 cup diced green peppers
1/2 cup apricot preserves
1/2 cup catalina dressing
1/4 cup soy sauce
1/4 cup water
1 tsp ground ginger
1 tsp garlic powder
8 oz small egg noodles, uncooked

Place all ingredients, except pasta, into a medium saucepan, stirring often until it comes to a simmer. Simmer 15 minutes, stirring often to prevent burning.

While sauce is simmering, bring 8 cups of water to a boil and add noodles. Boil 8-10 minutes or until tender.

Serve hot meatballs and sauce over pasta.
