Recipe: Microwave Rhubarb Crisp (or Fruit Crisp) (serves 1)

MICROWAVE RHUBARB CRISP

6 oz. rhubarb*
3 tbsp. quick-cooking oats
1/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/8 tsp. salt
1/4 tsp. cinnamon
2 tbsp. butter

Wash rhubarb and cut into 1/4-inch slices. Pack down into a 16-ounce ceramic souffl dish and set aside.

Place remaining ingredients in a 1-quart mixing bowl. Cut in butter with pastry blender until mixture is thoroughly blended. Pour over rhubarb and pack down with rubber spatula.

Microwave 6 minutes at 100% power, giving dish a quarter-turn after each 1 1/2 minutes (if your oven doesn't auto-rotate).

Let cool 15 minutes before serving.

*Try replacing the rhubarb with fresh apple slices or other fruit.
