ISO: A Really good Seafood Gumbo from a Texas - question

I am making gumbo for the first time since I absolutely love Pappadeaux Gumbo soup. Most of the recipe seems to call for a shrimp or crab stock but the one given used water. Does it make a big difference? And most of the recipe I found used alot of different herbs too.
