Recipe(tried): Hint for making roux

Don't stand over the roux stirring. Mix your flour and oil in an old black iron skillet and stick it in the oven about 325 degrees. Then start preparing your vegetables and browning them. By the time you finish with the vegetables, the roux will be ready. Stir the roux a couple of times while cooking; be sure and remove it from the skillet when the right color or it will continue to cook. An elderly lady from Louisiana taught me how to cook it; also said to make extra and freeze it; never tried that.
