While most of it sounds very accurate, coming from a native Cajun/mostly Texan, you forgot to include the rice! For true Pappadeaux style, pour about 2 cups of uncooked white minute-rice during the last 10-15 minutes. For true Cajun style, cook the rice separately, and pour the gumbo over a scoop of rice in your bowl... Other than that, this is a very good recipe! Thanks!
