I was in love with this potato salad and obsessed with it when pregnant with twins. I moved away from Little Rock and have been in search of the recipe and finally found it so here it is:
WHOLE HOG POTATO SALAD
3 1/2 lb red potatoes
1 tbsp sugar
1 tsp garlic powder
1 tsp ground black pepper
1 tsp dry parsley
1 tsp salt
1 tsp dry ranch dressing mix
1/3 cup chopped chives
1/2 cup chopped green onion
1 cup cooked, crumbled bacon
2 cups sour cream*
2 cups mayonnaise*
Boil potatoes and cube. Allow to cool.
Mix in sugar, all spices, chives, onion and bacon in one at a time then add the sour cream and mayonnaise. Cover and chill.
*A note from Betsy at Recipelink:
Thank you for posting the recipe Jessica. The 2 cups each sour cream and mayonnaise seems like too much for the number of potatoes. Could you please double-check your recipe and let us know. In the meantime, for anyone trying the recipe, I suggest adding equal amounts of sour cream and mayonnaise until you get the consistency your want - maybe start with 1/2 cup of each. Here's a similar recipe to compare it to:
