Recipe: Can't Get Easier Peanut Butter Fudge (using ready-to-spread frosting)
Desserts - Candy, ChocolateCAN'T GET EASIER PEANUT BUTTER FUDGE
"Epperly is retired, but works part time in Riverwalk Kroger's bakery. She accidentally discovered an easy peanut butter fudge one day while attempting to come up with a peanut butter frosting. It set up and tasted like fudge. She sent the recipe to Pillsbury, which responded with a nice note."
18 ounces peanut butter
1 container prepared Pillsbury cream cheese frosting
1 teaspoon vanilla
1 cup chopped English walnuts (optional)
Heat peanut butter in microwave until softened, but not runny; mix into cool icing; stir in vanilla and nuts (Thelma Epperly says this sets up while you're mixing it).
Spread in 8-inch square dish and refrigerate one hour. Cut into squares.
Makes about 2 pounds
