Recipe(tried): Tomato Soup Pasta Salad - Another Pasta Salad Using Tomato Soup
Salads - Potato, PastaGerri, I'm not sure this is what you are looking for, but this is the recipe I use when I don't want a mayonnaise based pasta salad.
TOMATO SOUP PASTA SALAD
16 ounces rotini (spiral) pasta, cooked and cooled
1 cucumber, peeled, seeded and diced
1 pint cherry or grape tomatoes, halved
1/2 cup green onion, thinly sliced
1 green bell pepper, diced
2 to 3 carrots, peeled and shredded
8 ounces cheddar or Monterey Jack cheese, cubed
8 ounces salami or pepperoni, diced
1/2 cup stuffed green olives, sliced
3/4 cup granulated sugar (or to taste)
3/4 cup vegetable oil
3/4 cup cider vinegar
1 can condensed tomato soup
In a small bowl, whisk together sugar, oil, vinegar and tomato soup.
In large bowl, combine pasta with vegetables, cheese, salami and olives. Toss with enough dressing to coat well.
Cover and chill several hours or overnight. More dressing may be added before serving if needed.
