Recipe: Cookie Brittle (4) (aka Toll House Cookie Brittle, Kookie Brittle, Broken Cookies)

TOLL HOUSE COOKIE BRITTLE
Makes 1 3/4 pounds

1 cup margarine, softened
1 1/2 tsp. vanilla
1 tsp. salt
1 cup sugar
2 cups flour
1 (12 oz.) pkg. chocolate chips
1/2 cup finely chopped walnuts

Preheat oven to 375 degrees F.

Combine margarine, vanilla, and salt; blend well. Gradually beat in sugar. Add flour then chocolate chips; mix well.

Press evenly into ungreased 15x10-inch pan. Sprinkle walnuts over top.

Bake for 25 minutes or until golden brown.

Cool, break into pieces.


COOKIE BRITTLE #2
Makes 5 dozen pieces

1 cup butter or margarine, softened
1 tsp. vanilla
1 cup sugar
2 cups unsifted flour
1 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
1 cup chopped pecans

Preheat oven to 375 degrees F.

In large bowl at medium speed cream butter, add salt and vanilla. Beat in sugar until light and fluffy. Add flour, mix until well combined. Stir in chocolate and pecans.

Pat dough into a greased 15 1/2x10 1/2x1 inch jelly roll pan.

Bake 375 degrees for 25 minutes or until lightly brown at edges. Cool in pan on wire rack.

When cool, break with hands into pieces.


COOKIE BRITTLE #3

1 cup margarine, softened
1 1/2 tsp. vanilla
1 tsp. salt
1 cup sugar
2 cups flour
1 (6 oz.) bag semi-sweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 375 degrees F.

Blend margarine, vanilla, and salt together. Gradually add sugar. Add flour and chocolate chips. Mix well.

Press evenly into ungreased cookie sheet. Sprinkle nuts over top.

Bake at 375 degrees for 20-25 minutes or until golden brown.

Cool and break into pieces.


Cookie Brittle #4

1 cup butter or margarine, softened
1 1/2 tsp. vanilla
1 tsp. salt
1 cup sugar
2 cups flour
1 cup semi sweet chocolate or butterscotch chips
1 cup walnuts or pecans, chopped, divided use

Preheat oven to 375 degrees F.

Combine margarine, vanilla, and salt; blend well. Gradually beat in sugar. Add flour, chips and 3/4 cup walnuts; mix well. Batter will be stiff.

Press evenly into ungreased 10x15-inch pan. Sprinkle remaining walnuts over top; press in lightly.

Bake 25 minutes at 375 degrees F, or until golden brown.

Break into irregular pieces.
