Recipe: I Can't Believe They're Passover Cookies (Parve)

I CAN'T BELIEVE THEY'RE PASSOVER COOKIES
(Parve)

2 cups Passover cake meal
2 cups matzoh farfel
1 1/2 cups sugar
1 teaspoon ground cinnamon
1 cup oil
4 large eggs, lightly beaten
1 cup Passover chocolate morsels

Preheat oven to 350 degrees F.

Combine cake meal, farfel, sugar, cinnamon, oil and eggs in a large bowl. Mix well. Fold in the chocolate chips.

Form heaping tablespoons of dough into loose balls with wet hands. Place on a greased baking sheet and flatten slightly. Cookies will not flatten during baking.

Bake for 20-30 minutes until light golden brown. Do not overbake.

Makes about 5 dozen cookies
