Recipe: Dom Deluise's Sister Ann's Cookies and Icing/Glaze (using orange juice, 1980's)

3/4 cup (1 1/2 sticks) margarine
1/3 cup sugar
3 eggs
1 tsp. vanilla
1/2 cup orange juice
3 cups flour (more, if needed)
3 tsp. baking powder
Icing (recipe follows)
Preheat oven to 350 degrees F.
Blend margarine, sugar, eggs, vanilla and orange juice in a blender and pour into a bowl.
Add the flour and baking powder and knead very thoroughly. Batter must not be sticky - may require more flour.
After nicely blended, take a large tablespoon of batter (or a walnut-size amount) and roll between your hands to form a long pretzel-like stick. You may make cookies in this shape, or bring the 2 ends together to form a small doughnut, or press into flat cookie shapes. Place on a large ungreased cookie sheet. Let stand 10 minutes at room temperature before baking.
Bake at 350 degrees F for 15 to 17 minutes, or until lightly golden.
Dip each hot cookie into icing mixture which will form a glaze over the cookies. Place on a dish. Sprinkle with candy confetti. Let cool until icing dries.
ICING:
(Prepare while cookies are baking.)
1/2 lb. confectioner's sugar
1/2 tsp. vanilla
1/2 cup orange juice (as needed)
Put confectioner's sugar and vanilla in a mixing bowl. Mix in orange juice, a little at a time, until consistency of a heavy syrup. If necessary, add more orange juice sparingly.
Makes 24 cookies
