Recipe(tried): KYJoe's Potato Salad

KYJOE'S POTATO SALAD

6 firm potatoes
Celery, chopped according to your taste
approx. 1/2 cup minced Gherkin sweet pickles
1/2 cup black or green olives, diced
1/2 cup finely chopped sweet onion
Miracle Whip salad dressing (to taste)
Yellow mustard (to taste)
4 tbsp. vinegar
2 tbsp. sugar
1 tsp. celery seed (optional)
Salt and black pepper (to taste)
2 eggs, hard boiled and sliced
Paprika (for garnish)

Boil potatoes whole and don't overcook. Immediately pour off hot water and put them in cold water until they are cool. Peel the potatoes and cut them in quarter inch cubes.

Place the potatoes in mixing bowl. Add celery, sweet pickles, olives, and onions.

Fold in Miracle Whip and yellow mustard according to your taste. Add vinegar, sugar, and celery seed, if using; mix well. Pour the mixture in the potato mixture and mix well. Add salt and black pepper to taste.

Pour potato salad to serving dish and place sliced eggs on top and sprinkle with paprika for eye appeal.
