Recipe: Tuna-Roni Salad

TUNA-RONI SALAD

1 1/2 cups macaroni, uncooked
1/2 cup mayonnaise
2 tsp prepared mustard
1/2 tsp salt
dash black pepper
1 tsp cider vinegar
2 cups shredded cabbage (chopped in blender)
1 medium carrot, grated
1/4 cup slivered green bell pepper
1 (7 oz) can tuna, drained and flaked
1 1/2 tbsp shredded onion

Prepare 2 hours in advance.

Cook macaroni according to package directions, drain, and place in a large bowl.

In a small bowl combine mayonnaise, mustard, cider vinegar, salt, and pepper. Pour over macaroni to keep it moist.

Add shredded cabbage (chopped in blender), grated carrot, and green pepper and stir to combine. Add the tuna and onion and mix together well. Cover tightly and chill before serving.

Servings: 8
