ISO: Vegetarian Spanish Bean Soup

Misc.
I make Spanish Bean (Garbanzo Bean) Soup, but usually with chorizo sausage and other meat products. One of my friends is vegetarian and I would like to make a tasty soup similar to this (with garbanzo beans) that contains no meat products. I have thought about using vegetable stock, and still using saffron, etc. If anyone has made something like this that has turned out well, I would appreciate either a recipe or thoughts on substitutions. Thanks!!
