Recipe: Creamed Spinach - Check this one out.

Good afternoon. Here is a very easy recipe for you. I have not tried it because I cannot eat much dairy foods. It does lend itself to slight recipe changes & options.
I hope it works for you.

CREAMED SPINACH

2 cartons (10 oz each) frozen spinach, thawed and drained
2 tbsp olive oil
1 tbsp chopped-up garlic (or more to taste)
1/2 cup part-skim ricotta cheese
1/2 cup low-fat cottage cheese
1/4 cup crumbled up feta cheese
seasonings to your taste

Cook spinach in olive oil and garlic.

Remove from heat and mix in balance of ingredients. Mix well, return to heat (lo-flame) just long enough to heat thru.

Adjust cheese amounts to your taste.
