Suggestion for Veggie Spanish Bean Soup recipe

American chorizo is the Mexican variety, so I would suggest using a vegetarian Italian sausage (sweet not hot) if possible--this is much more similar to Spanish chorizo.

I love fabada--one of my favorite things--but I am trying to slowly become vegetarian so will have to give up some stuff. Use the big white kidney beans/cannelli beans which are the ones they use in Spain.
