Recipe(tried): Garlic Lover's Pot Roast, Squash and Onions (microwave), Honey Walnut Bread (bread machine), Mama's Strawberry Pie - Sunday Dinner at Our House

Today is a beautiful spring day here in AL. It's getting really warm, but not too warm to cook!

Today for lunch we had: Garlic Lovers' Pot Roast, garlic smashed potatoes, zipper cream peas, rutabagas, squash stewed with onions, sliced tomatoes, Honey Walnut Bread (from the bread machine), CLAUSSEN Pickles, Mama's Strawberry Pie with Cool Whip, and sweet tea with lemon.

SQUASH AND ONIONS--(Microwave)

6-7 small squash, washed and cut into "chunky" pieces
1 yellow onions, chopped
1 Tbsp. vegetable oil
Salt and pepper to taste
Enough water to cover the squash

Place the squash in a 4 qt. microwave-safe bowl. Add the onion, vegetable oil, salt and pepper, and mix. Pour water over the squash until the squash is covered. Place plastic wrap or wax paper on the top of the bowl. Microwave on HIGH for 18 minutes. Remove the bowl from the microwave. Taste the squash. If it is done, remove plastic wrap and drain off the water. Serve out of a serving bowl. If the squash isn't done, microwave on HIGH checking every 3 minutes until the squash is done to your liking.

MAMA'S STRAWBERRY PIE--(Microwave)

2 deep dish pie crusts
1 quart fresh strawberries, washed, stems removed, and sliced
1 3/4 cup water
1 3/4 cup sugar
5 Tbsp. cornstarch
1 (6 oz.) pkg. strawberry Jello

Prick the bottoms of the pie crusts and bake according to package directions. Let the crusts cool.

In a large microwave-safe bowl, combine the sugar, water, and cornstarch. Microwave on HIGH for 12-15 minutes or until mixture becomes clear and thick. Add the Jello to the cornstarch mixture. Let the mixture cool.

When cool, add strawberries. Divide this mixture evenly between the two pie crusts. Refrigerate overnight and serve with whipped cream or Cool Whip.

***This recipe is similar to the SHONEY's Strawberry Pie that everyone raves about!
