Brittany (11:02:58) : CHOCOLATE FUDGE

3 pkgs semi-sweet
choc chips
1-can eagle brand milk
2 tsp vanilla extract
1/2 cup chopped nuts.

Melt choc chips with eagle brand milk.
Stir in vanilla and nuts.
Spread evenly on wax paper 8" square pan. Chill 4 hours
Remove from pan and peel off paper.
Cut into squares.
And enjoy:)

MED/TN (10:11:18) : EISENHOWER'S CHOCOLATE CAKE

1/2 c Butter
2 c Sugar
3 x Eggs
1 c Sour Milk
2 1/2 c Sifted Flour
1 ts Baking Soda
1 ts Baking Powder; round
2/3 c Cocoa; dissolve in
1/2 c Boiling water
1 ts Vanilla
1/4 ts Salt

FROSTING
2 Egg Whites
1 1/2 c Sugar; sift fine
5 tb Cold water
1 pn Salt
1/2 ts Cream of Tartar

Sift flour, baking powder & salt. Cream shortening. Slowly beat in sugar.
Add egg yolds & vanilla. Add cocoa, then flour mixture alternately with
milk. Fold in stiffly beaten egg whites. Pour in 2 greased 9" layer cake
tins. Bake 25 minutes in 375~ oven. FROSTING:Combine 2 egg whites, unbeaten
with 1 1/2 cups sugar, finely sifted. Add 5 tbsps. cold water, a few rains
salt and 1/2 tsp. Cream of Tarter in top of double boiler. Stir until sugar
is dissolved. Place over briskly boiling water. Beat with egg beater until
stiff enough to stand in peaks, about 6-10 minutes. Add 1 tsp. vanilla and
beat until thick enough to spread while frosting is cooling. Keep sides of
double boiler scraped down with spatula.sam/ct (09:00:55) : for a fool proof pie crust try this, it is the most forgiving pie crust i have used.

VINEGAR PIE PASTRY

4 cups flour
1 tbsp sugar
2 tsp salt
1 3/4 c shortening
1/2 c water
2 tbsp cider vinegar
1 egg

in a large bowl combine flour, sugar and salt. With pastry blender cutin shortening until mixture resembles coarse crumbs. Combine water, vinegar and egg, beast with fork, pour into flour mixture. mix well until pastry holds together (dough will be sticky). Cover and chill at least 2 hours, overnight is better. Divide dough into 4 or 5 balls,use what you need wrap remainder tightly and refrigerate up to 2 weeks or freeze up to 2 months.

2 eggs, separated
1 cup sugar
1/4 cup flour
Juice of 1 lemon (1 tablespoons) and grated rind
1 cup milk
9-inch baked pie shell
2 tablespoons melted butter

Beat egg yolks and milk. Stir in one cup sugar and flour. Beat in lemon juice and rind. Beat egg whites until they form peaks. Fold in mixture. Bake pie shell for five minutes at 350 degrees. Pour in filling. Bake for forty minutes or until firm. When cut there will be a delicate cake on top with pie on the bottom.

BEST EVER COCONUT CREAM PIE

Pie shell:
1 1/2 c. all purpose flour
1/2 Crisco or other vegetable oil
2 T. milk
2 T. sugar
1 tsp. salt

Mix all together with a fork in a bowl until it all clings together. Pat into a 9 inch pie pan. Prick holes
in dough with a fork. Bake at 400 degrees 10 to 12 minutes or until golden.

Filling:
2 c. milk
1/3 c. flour
1/4 tsp. salt
3 eggs
3/4 c. sugar
1 tsp vanilla
2 T. butter
1 1/3 c. grated coconut

Topping
Whipping cream whipped or Cool Whip
1/3 cup coconut, toasted

Heat 1 1/2 c. milk in saucepan until warm. Stir flour and salt together into remaining 1/2 c. milk.
Add mixture to hot milk. Cook, stirring frequently for 10 minutes on low heat.
Beat eggs with sugar. Slowly pour into hot mixture. Cook for two minutes.
Add vanilla, butter, and coconut, after removing from heat. Cool.
Pour into baked cooled crust.
Cool; top with whipped cream and toasted coconut. Refrigerate several hours before serving.
Serves 8

PIECRUST

This recipe was given to me by Shirley Ketzler, wife of Tom Ketzler, former pastor of Centenary United Methodist Church

1/4 cup Crisco
1/4 cup margarine
1 cup flour
1 tablespoon sugar

Melt Crisco and margarine on low heat. Take off of heat and add flour and sugar. Mix well. Bake at 350 degrees for eighteen minutes.
Yield: 1 piecrust

Verla,.Il (08:41:58) : Pat in Pan Pie Crust

In a bowl combine using a fork:
1 1/2 flour
1/2 c. crisco oil
2 T. milk
2 T. sugar
1 tsp salt

Mix until it forms into a ball.
Pat in 9 inch pie pan

Bake at 400 for 10 minutes or until golden.

This melts in your mouth! I use it for all cream pies and other one crust ones too.

Corn Fritters

2 eggs
2 cups fresh corn or frozen (thawed)
2 tbsp sugar
dash of black pepper
4 tbsp flour
1/2 tsp baking powder
3 tbsp milk

beat eggs add the corn to them. In a cup mix together sugar pepper flour and baking powder. Add this mixture and milk to corn and eggs. Fry in margarine or butter brown on both sides. Serve at once with syrup.

Mix 3 cups of sugar with one cup of water over medium heat until sugar is
completely in solution. Do not boil or scorch the sugar. Add 1 cup
high-quality instant coffee. Mix into one quart vodka, add 1 vanilla
bean, seal and let sit for three weeks. Discard the vanilla bean and
enjoy. This recipe has a stronger coffee and alcohol flavor.

KellyWA (07:49:12) : Homemade Tia-Maria

1 cup of water
3/4 to 1 cup of brown sugar
4 tablespoons coffee powder

Boil for 10 mins and let cool.
Add 1 cup of Bundy Rum
4 teaspoons vanilla essence

Put in clean bottle(s) and leave for 1 week before using.
